マロンペーストをそのまま使っても簡単に出来上がりますが、今回はマロングラッセをペースト状にしてみました。このマロングラッセは糖衣かけをしていないタイプなので、栗本来の味が楽しめる、そして、しっとりとした触感と上品な甘さが特徴です。
マロングラッセと生クリーム、ブランデーをフードプロセッサーでペースト状にします。マロングラッセに甘さは付いていますが、お好みで砂糖や蜂蜜で調整します。
生クリームはしっかりと甘さを出すと、より栗の風味が引き立ちます。
クリームを「モンテ（山）」のようにするには、熱したスプーンを使って形を整えるときれいに仕上がります。試してみてください。
