パートブリックとはクレープの皮のような薄いシート状の生地です。中東発祥と言われ、イタリア料理やフランス料理の様々な場面でアレンジされて使用されます。
焼き固めたポルペットーネを冷ましてからパートブリックで包み、オーブンで焼き上げます。
パートブリックには、卵液を塗ってから焼くときれいにパリッと出来上がります。包み方は色々な形がありますが、何層にもしてしまうとパリッとした食感にはなりません。
ふわっとした形がおすすめです。
ソースはトリュフソースにしましたが、どのようなソースにもよく合います。一般的なデミグラスソースでも美味しくなります。
