焼き固めたポルペットーネを冷ましてからパートブリックで包み、オーブンで焼き上げます。
パートブリックには、卵液を塗ってから焼くときれいにパリッと出来上がります。包み方は色々な形がありますが、何層にもしてしまうとパリッとした食感にはなりません。
ふわっとした形がおすすめです。
ソースはトリュフソースにしましたが、どのようなソースにもよく合います。一般的なデミグラスソースでも美味しくなります。
